Massaged AvoKale Salad


If raw kale is too bitter, and cooked kale isn't your thing either, you are in luck! Massaging the avocado into the kale breaks down the bitter flavor, while keeping the nutrition in tact! This is a great salad for the both the kale lover and the "I'm not so sure about this whole kale thing!" For me, the home-run is in the sesame seeds, this packs in protein, nutrients, and a fun nutty texture to the salad! Plus, it takes 5 minutes to make! How could you go wrong?

Serves: 2

Time to make: 5 minutes

Ingredients:

6 stalks of curly kale, stems removed.

1 avocado, mashed

1 tsp coconut oil

1 tsp salt

1 tsp sesame seeds

Steps:

1. Massage avocado mash into the leaves of the kale until all lumps are removed

2. Sprinkle in coconut oil and salt, and continue to massage until evenly coated

3. Sprinkle with sesame seeds.

4. Serve cold
