I searched the web for some recipes for a chia seed jam, but all of them contained something extra...something unnecessary (I thought, at least). I didn't want to add maple syrup, or even vanilla exact. It seemed unnecessary.
So, I got in the kitchen and decided to make it up as I go (that's kind of how it always goes for me). I took 1 cup fresh blueberries, muddled them in a mortar and pestle (that I got at TJ MAX for the win!).
Total Time to Make: 10 minutes
Serves: 2-4 people, 4-6 tablespoons
1 cup fresh blueberries
2 tablespoons chia seeds (I used white chia seeds,from Salba Chia, which compared to common chia, Salba chia has more omega-3's and protein.
1. In a bowl, mash blueberries until the skin is coming up
2. Transfer the blueberries into skillet on medium heat, continuing to mash as the heat softens the blueberries
3. Toss in the chia seeds, and mix around with a spoon
4. Change heat to simmer, and allow the jam to cook for 5 minutes, stirring occasionally.
5. Enjoy hot or cold!
